Savory Banana Muffins (Soft & Moist)

  

Have I gone crazy? Or are your eyes playing tricks on you?  Banana muffins are sweet, how can it be savory?

I must have gone mad that day when I decided to do a different version of the Banana muffins.  Since I do not eat much sweet things these days, I decided to do a salty version of it.  It has been a very long time since I ate any banana cakes.

When the muffins were baked, I served my mum with one to taste, she loves it!  The muffin texture was super soft and moist, and it is not sweet.  My mum has to control her sugar in-take, so these muffins make a great dessert for older people like her who cannot eat sweet things but still want to enjoy soft banana cakes.

I also brought these Savory Banana Muffins to share with a few new friends.  I told them that these Banana Muffins are Savory, not sweet!  I can see their eyes opening wide.  One of them was about to reject my Banana Muffins until she heard the word “Savory”?  She thought she heard me wrongly.  Nonetheless, she gamely tried my “Savory Banana Muffins”.  Guess what, two days later, she told me she missed my Savory Banana Muffins and hope to eat it again …. (hint hint…. ha ha ha).  My other friends also gave positive feedback for this muffins saying they like this savory version of banana muffins.

This muffin is extremely easy to make.  There is no need to use egg beater or complicated process.  Just add the ingredients step-by-step and mixed using a hand whisk.  If you do not have buttermilk, just take 1/8 cup of milk (room temperature), add in 1/8 tbsp lemon juice or white vinegar to the milk and let it stand for 5 mins (to curdle).

To make this version of Salty Banana Muffins, I use the Del Monte Bananas that turned yellow (just beginning to ripe), but not the super ripe ones with brown dots on it.  So these bananas are not very sweet yet.  Next, I added Cheddar cheese slice to the middle of the muffins so that during the baking process, the cheese melted into the batter.   I recommend adding cheese slice to the top of the muffins for additional taste.  The resulting muffin will taste slightly salty, with banana aroma.  Yummy …..

  Add about 1/4 batter into the muffin cup.  Add in Cheese slice.  Then top up with more batter until about 3/4 cup full.

  For added taste, add cheese slice on top of the muffins too.

Savory Banana Muffins Recipe

Preparation time: 20 mins.  Make about 8 medium size muffins.

Ingredients

1.5 or 2 large ripe Bananas (just ripe, but not super ripe)

1/4 cup Vegetable oil

1/8 cup Castor sugar

2 small Eggs (room temperature)

1/8 cup Buttermilk (room temperature)

1 cup (or 125 grams) Plain flour

3/4 tsp Baking powder

1/4 tsp Baking soda

1/4 tsp Cinnamon powder

1/4 tsp Salt

1 slice of Cheddar Cheese

Method

  1. Preheat oven to 210 oC.
  2. Smashed bananas with a fork till puree state.  Pour the smashed bananas to a clean bowl.
  3. Add oil and sugar to the smashed bananas.  Use a hand whisk to mix together.
  4. Add in eggs and buttermilk to the banana mixture and whisk till combined.
  5. Next, shift in the flour, baking powder, baking soda, cinnamon powder and salt to the banana mixture.  Use spatula to fold the dry ingredients to the wet ingredients until well combined.  You should have a thick sticky batter.
  6. Pour about 1/4 of batter into muffins cup, then add in slices of cheese, then pour in more batter to the muffins cup until 3/4 full.  Optional if you wish to put cheese slice on top of the muffins.
  7. Bake at 210 oC for 8 mins, then reduce the oven temperature to 175 oC and bake for another 7-8 mins (or until the skewer goes in and comes out clean).
